Chicken Quesadillas
A tasty Mexican treat that is easy to make in your Dutch oven. Serve with salsa, pico de gallo, sour cream and guacamole. It's like having your favorite Mexican restaurant right at your campsite. Some assembly required.

Instructions
  1. Heat 12-inch Dutch oven to 400 degrees for baking.
  2. Pour chicken, undrained, into a small cast iron skillet over a full spread of coals.
  3. Add chili powder and minced garlic.
  4. Shred the chicken with a fork (I like to leave a few larger chunks) and mix well.
  5. Stir the chicken mixture while it heats (about 5 minutes).
Make quesadillas
  1. Place a flour tortilla on a 12-square of aluminum foil.
  2. Spread 1/6 of chicken mixture over the tortilla.
  3. Sprinkle 1/6 of onion over the chicken mixture.
  4. Sprinkle 1/6 of jalapenos over the chicken mixture.
  5. Sprinkle shredded cheese over the chicken mixture.
  6. Top with a second tortilla.
  7. Place into Dutch oven.
  8. You can continue stacking the tortilla on sheets of foil.
  9. Bake for about 10 minutes.
  10. Lift them out of the Dutch oven by the corners of the foil.
  11. Place on a cutting board and cut each quesadilla into 4 or 6 slices.
  12. Serve with salsa, pico de gallo, sour cream and guacamole.
