armadillo eggs

We’re getting ready for a camping trip this weekend. Ain’t Leo is busy making lists, so I get to scour my recipe files for something good to eat. A friend sent me this one a few months ago, so I fired up the backyard dutch oven. It is a keeper.


: Armadillo Eggs

: If you like spicy, this is a great snack.

  1. 1/4 stick of butter
  2. 24 pickled jalapeno peppers
  3. 2 cups Bisquick mix
  4. 12 oz shredded pepper jack cheese
  5. 2 lb hot pork sausage
  6. 2 pkg Shake and Bake pork seasoning in a Zip Lock bag

  1. Tear the sausage into very small bits.
  2. In a bowl, mix sausage, Bisquick, and 6 oz of the cheese to make a dough. You can add a little water if the dough is too thick.
  3. Cut the stem off each pepper, slit it down one side, and remove the seeds.
  4. Stuff the pepper with some of the remaining pepper jack cheese.
  5. Make a flat patty of the biscuit/sausage dough.
  6. Place a stuffed pepper in the middle of the dough patty. Wrap the dough around the patty and pinch it closed.
  7. Drop the wrapped pepper into the ZipLock bag and shake until coated.
  8. Heat the dutch oven over coals and rub the inside with the butter. You won’t need a lid for this recipe because all of the heat will be under the oven.
  9. Place a few peppers into the dutch oven and fry until they are very brown all over. Make sure that the sausage is cooked well.

Number of servings (yield): 6

Try this one out and let me know what you think. I suppose you could do this in the kitchen, but why would you  want to? Everyone knows that this stuff tastes better when cooked over a campfire.
