southwestern inspired cornbread dinner

I found this recipe in a old cookbook. It sounded tasty, so I made a few refinements and modded it to work in the dutch oven. We tried it over the fire last night and it was mighty tasty. I shared it with my buddy Dan and, as usual, his only comment was, “Coulda used more peppers. Pass the Jack, homey.”

That’s quite a speech coming from Dan. I wish Walter would learn to follow his lead.

: beef cornbread dinner

: A tasty southwest inspired dinner treat. Great with a side of hot salsa.

  2. 1 lb ground beef
  3. 1/3 cup chopped onion
  4. 1 clove garlic, minced
  5. 1/4 cup hot ketchup
  6. 1 tsp salt
  7. 1 pkg (8 1/2 oz.) cornbread/muffin mix
  8. 1 cup shredded cheddar cheese
  10. 2 tbsp cold water
  11. 2 tsp cornstarch
  12. 1 can (8 oz.) diced tomatoes, undrained
  13. 1/4 tsp chili powder
  14. 1/4 tsp cumin
  15. 1/4 tsp garlic powder
  16. 1 tsp sugar
  17. 2 tbsp chopped chili peppers
  18. 2 tbsp chopped green peppers
  19. 1 tsp Worcestershire sauce

  1. In a dutch oven, cook beef, onion and garlic over medium heat until the meat is no longer pink. Drain. Stir in ketchup and salt
  2. Prepare cornbread mix according to package directions.
  3. Spread half the batter in the greased dutch over.
  4. Spoon beef mixture over the batter; sprinkle with the cheddar cheese.
  5. Spread remaining cornbread batter over the cheese.
  6. Place the dutch oven over 10 evenly spaced coals & place 16 coals evenly around the lid.
  7. Bake for 30 – 35 minutes. Take care to rotate the oven a quarter- turn and the lid a quarter-turn every ten minutes to insure even heat.
  8. In s small saucepan, combine all of the sauce ingredients.. Cook over medium heat until thickened.
  9. Let the cornbread stand for 5 minutes after removing from the coals.
  10. Cut the cornbread into wedges and spoon the sauce over the top.
