mini-quiches

This is another RV roundup request. This was a nice addition for a quick breakfast.

: Small treats for a quick breakfast.

  1. 30 unbaked miniature tart shells
  2. I used empanada dough instead and trimmed it to fit the muffin pan
  3. 4 strips crispy bacon
  4. 1 small can mushrooms, drained
  5. 1/4 cup chopped green onions
  6. 3 eggs
  7. 1 cup sour cream

  1. Chop bacon, fry until crisp.
  2. Remove fat.
  3. Add onions, mushrooms and a dash of salt.
  4. Cook until tender.
  5. Set aside to cool.
  6. Beat eggs; stir in sour cream.
  7. Divide bacon and mushroom mixture evenly into shells.
  8. Spoon egg mixture into shell until filled.
  9. Bake at 375 degrees for 20 minutes.
  10. Can be reheated. Freezes well.
